apple pie ————————————————— honeycrisp apple, pompona vanilla, salted caramel ————————————————— for our last course we ended with our take on classic apple pie making a tarte tatin. on the bottom sits a pompona vanilla sablé cookie, with a caramelized honeycrisp apple tarte and pompona vanilla whipped cream and salted caramel on top. served alongside a homemade pompona vanilla ice cream infused with japanese whiskey. garnished with wood sorrel and denim jump up viola flowers from @farm.one. paired with a homemade granny apple soda.
