November 19, 2019cranberry sauce ————————————————— wild boar, cranberry, acorn squash seeds ————————————————— for our take on cranberry sauce, we did a cranberry risotto made from 7-year aged @risoacquerello, fresh cranberries and a homemade pork stock. on top is a wild boar belly from @fossilfarms that was braised with cranberry sauce. garnished with roasted acorn squash seeds and micro chervil from @farm.one. paired with a glass of couvent des thorins, moulin-à-vent, 2017.
