May 14, 2019quick dip in arugam bay: little sri lanka, staten island ——————————————————— taro root, vanilla bean, blue spice basil ——————————————————— as a palette cleanser before the main course, we made a taro root sorbet infused with tahitian vanilla bean. given the starchiness of the taro, this sorbet took on a texture similar to booza. we served this with taro root chips that we dehydrated and then fried, blue spice basil from @farm.one and freshly grated nutmeg. #chez
