April 30, 2020| JOANAS LAB | REISHI SPARKLING SAUCE | 3 tbs extra virgin olive oil 3 garlic cloves, minced 1/4 cup chive, minced 1 small bunch asparagus, though ends trimmed and cut into 1/2 inch pieces 1/2 pound fresh morel mushrooms ( any others mushrooms works fine) pink Himalayan salt to taste pinch freshly ground black pepper 1/2 cup sparkling wine 1/4 cup fresh sage 1/2 tsp reishi powder 2 tbs nutritional yeast Put a large sauté pan over medium heat and add extra virgin olive oil. When the oil is warm enough, toss in the garlic and cook, stirring, until softened, about 1 minute. Add the asparagus and morels, season with salt and pepper, and toss until the asparagus and mushrooms are well coated, 1 to 2 minutes. Pour in the sparkling wine, allowing it to bubble up, sprinkle in the chives, sage, and reishi powder, and cook the sauce down until reduced by half, about 2 minutes. Add the pasta to the sauce. Season agin with salt, pepper and nutritional yeast flakes. If the sauce gets too thick, thin it with enough of the reserved pasta water so the pasta is coated. | #plantbased #adaptogens
