Farm Basket Sweet Vermouth: Plant Based Cocktails

Making your own sweet vermouth is surprisingly easy. Follow along with Oliver Holt to take Farm.One herbs and turn them into a delicious boozy treat. Enjoy it over ice on its own or in a cocktail like our Summer Savory Negroni!

Ingredients

  • 750mL White Wine (recommend Pinot Grigio or Sauvignon)
  • 3 Juniper Berries
  • 2 Cardamom Pods
  • 1 Allspice Berry
  • 2 Cloves
  • 1 Star Anise Pod
  • 3 Strips of Orange Peel
  • 2 Strips of Lemon Peel
  • 50mL Honey
  • 1oz Farm.One Farm Basket Sweet Vermouth Herb Mix (Lemon Basil, Bronze Fennel, Peppermint or Candypops Mint, & Durango Marigold Leaf or Gem Marigold Leaf)
  • 2.5oz Gin
  • 0.5oz Rye
  • 1oz Port

Method

Combine wine, juniper berries, cardamom pods, allspice berry, cloves, star anise, orange peel, and lemon peel in a pot and simmer over low heat, covered, for about 15 minutes, until the room is deeply perfumed.

While the wine mixture simmers, caramelize honey in a separate pot over medium high heat, stirring constantly. Cook until all water bubbles out and surface sugars caramelize. Once it thickens, deepens in color, and begins to smell nutty and fragrant, remove from heat and place to the side.

Once the wine has been infused, turn off the heat and add the Lemon Basil, Peppermint, Marigold Leaf, & Bronze Fennel, stir, and cover. Let the herbs steep for about 5 minutes and strain, reserving the infused wine mixture. Place the infused wine mixture in a large mixing bowl or cup and stir in caramelized honey.

Tasting as you go, stir in the Gin, Rye, and Port. If the mixture needs more sweetness, add more Port. If it needs more of a pop, add more Gin. If it needs more depth and structure, add Rye.

Pour your mixture into a container with a lid, refrigerate, and enjoy.
