Also known as starflower, all parts of the plant—except the roots, are flavorful. Cucumber-flavored leaves for tea and other beverages as well as bright starry blue flowers for decorating salads. As a fresh vegetable, borage is often used in salads or as a garnish. The flower has a sweet honey-like taste and is often used to decorate desserts and cocktails. Traditionally borage was cultivated for culinary and medicinal uses, although today commercial cultivated mainly as an oilseed.
