These pea shoots and their wispy tendrils can be deconstructed or used whole as a raw garnish or an alternative lettuce substitute. The afilla pea shoot is sought after for its elongated, curly tendrils, which differentiate it from the branchy-tendriled snap pea shoot, and the longer-stalked field pea shoot. Due to their firm texture, afilla pea shoots hold up well to a flash stir-fry and their sturdy stems make good textural company alongside frizzled prosciutto or fried shallots.
