Traditionally borage was cultivated for culinary and medicinal uses, although today borage leaves are commercially cultivated mainly as an oilseed. We grow borage as a micro-green. Its leaves have a fresh cucumber and celery flavor, and their thick leaves provide nice crunch and texture to a dish.
